Peony Jade Chinese New Year Menu 2014
This Chinese New Year, you might want to opt for a flamboyant reunion dinner with Peony Jade – The 8 Beauties of the Blossoming Spring. We were invited to taste the Chinese New Year menu that features unpretentious and innovatively prepared dishes. Such as the carefully arranged “Instant Enormous Windfall, Good Health and Longevity” Horse-Shaped Yu Sheng ($198.88) which was visually appealing as it was appetising. Even the Chinese characters “马上有钱” was a smart play on the otherwise common Chinese New Year idiom!
Boasting an array of fresh premium seafood, such as Atlantic salmon, Australian abalone, hamachi, jellyfish, tuna belly and luscious roe, the yu sheng was heightened of its natural sweetness with special sweet sauce and citrusy yuzu juice. Crunchy textures were also present from the restaurant’s signature deep-fried lotus root chips, crispy fried vermicelli and roasted pine nuts.
One of the more remarkable dishes was the “Abounding Riches” Golden Suckling Pig Stuffed with Glutinous Rice ($238.88). Slow roasted over charcoal fire to crispy, succulent perfection, the thinly sliced bite-sized pieces of pork served atop tasty glutinous rice stuffing were savoury and divine.
Baked “Prosperity Forward” Horse Ingot ($288.88) was also a hit, both literally and metaphorically. We were presented with a small steel hammer and asked to throw hits on the ingot-shaped hard crust. What was beneath impressed us – a treasure trove of fresh Australian abalones, crispy pork knuckle, pork tendons, premium golden conpoy, chestnuts, mushrooms, fatt choy and red dates in thick sauce that was aromatic and flavourful.
“Abundance Wealth” Imperial Abacus with Lobster and Abalones ($118.88) featured a rigorously handcrafted work-of-art by Chef Lee Hee Min and his talented culinary team. The soft, delicate and slightly chewy yam abacus seeds had just the right level of springy texture. We thoroughly enjoyed the combination of lavish ingredients, such as Australian abalone, lobster, pork belly, premium conpoy and sweet potato.
Most if not all of us were truly fond of the “Pot of Abundance Harvest” Premium Whole Abalone Treasures Poon Choy (6 Pax $388.88/10 Pax $528.88). The classic dish showcased 18 premium ingredients, including Australian abalones, whole Sakura chicken, golden oysters, roasted pork, whole scallops, fatt choy, homemade sea-grouper mousse cake, whole conpoy, pork knuckle and broccoli in rich, tasty broth. Given the serving portion per diner, we thought this dish to be value for money.
The next dishes were truly the testaments of the restaurant’s creativity in blending tastes. “Reaping Good Fortune” Prosperity Lychee Roasted Mandarin Duck (Half $48.88/Whole $78.88) beautifully merged savoury, juicy and tender meat with sweet, smooth lychee essence, intensifying the natural flavours of the duck. If you pay close enough attention, you could even get a whiff of sweet scented lychee – truly sensory!
“Reaping Good Fortune” Prosperity Truffle Roasted Chicken (Half $33.88/Whole $68.88) also impressed us with carefully roasted meat in fragrant black truffles and truffle-scented oil, creating a balance between succulent chicken and earthy truffle.
Finally, for dessert, we had traditional nian gao with a modern luxurious twist. The Teochew Orh-ni (Yam) Prosperity Koi fish Nian Gao (3 Pcs $118.88) comprised of yam, oolong tea infused with sweet Osmanthus, and coconut, which soft textures and flavours were evenly distributed in each bite. While the Mao Shan Wang Durian Prosperity Koi fish Nian Gao ($78.88) comprised of aromatic yet bittersweet pure D24 Durian pulps.
If you are looking for the perfect gift for your colleagues or in-laws, consider the 8 Fa-Chye-Ma/Wealth Horses Soaring Great Heights ($118.88) filled with sea bird’s nest and custard ingredient. They not only look great and taste great, but also symbolise business luck and prosperity!
