The story of Peppermint

Peppermint is the halal-certified, all-day buffet restaurant on Level 4 of PARKROYAL COLLECTION Marina Bay. It took over the space of AquaMarine, the long-running halal buffet of the old Marina Mandarin hotel, and reopened in late 2020 with a garden-themed, farm-to-table look built around the hotel's own urban farm.

  • 2011: AquaMarine, the Level 4 international buffet that preceded Peppermint, earned halal certification and was billed as the first hotel restaurant in the Marina Bay and Suntec area to do so.
  • 2020: Pan Pacific Hotels Group announced a S$45 million makeover that would turn Marina Mandarin into PARKROYAL COLLECTION Marina Bay and rename AquaMarine as Peppermint, a halal concept with open kitchens and greenhouse-style private dining rooms.
  • 2020: The rebranded hotel launched and Peppermint opened in the former AquaMarine space with a new concept and decor, keeping its halal certification.
  • 2021: The hotel's urban farm came online and began supplying herbs, edible flowers and vegetables to Peppermint's buffet, and the S$45 million refurbishment was declared complete in August.
  • 2024: Savour BlackBookAsia magazine ranked Peppermint first in its Best Buffet Singapore 2024 (Mid Year) list, choosing it from close to 50 buffets.
  • 2025: Peppermint was named Best Hotel Buffet in the Honeycombers Love Local Awards 2025, according to the hotel.

Did you know?

  • The kitchen and buffet stations are halal-certified, a tradition the space has kept since its AquaMarine days in 2011.
  • Peppermint's farm-to-table angle comes from the hotel's own urban farm, which grows herbs, edible flowers and vegetables that end up on the buffet.
  • The kitchen is led by Chef de Cuisine Leon Yee, a competition chef with gold medals from FHA Singapore and the 2014 Expogast Culinary World Cup in Luxembourg, under hotel Executive Chef Chan Tuck Wai.
  • The restaurant is operated by Pan Pacific Hotels Group, and the hotel came under full UOL Group and United Industrial Corporation ownership in April 2019.
