The story of Soup Restaurant
Soup Restaurant began in 1991 as a side project in a Chinatown shophouse, started by four civil engineers who wanted to serve Cantonese home-style cooking and double-boiled soups. Its Samsui Ginger Chicken, a tribute to the Samsui women who worked on Singapore's building sites, turned it into a homegrown chain.
- 1991: The first Soup Restaurant opened in a shophouse on Smith Street in Chinatown with a handful of tables.
- 1995: Samsui Ginger Chicken, based on a family recipe from co-founder Mok Yip Peng, joined the menu and became the signature dish.
- 1997: A second outlet opened on Seah Street, followed by mall outlets at Causeway Point, Jurong Point and Suntec City.
- 2007: The business listed on the Singapore Exchange as Soup Restaurant Group.
- 2016: Mok Yip Peng retired and co-founder Wong Wei Teck took over as managing director.
- 2019: The group launched SAMSUI, a modern spin-off built around the signature chicken, at Jewel Changi Airport.
