The story of Hua Ting
Hua Ting (華廳) is the Cantonese fine-dining restaurant on Level 2 of Orchard Hotel Singapore, open since 1992 and often counted among the city's earliest Chinese restaurants of its kind in a hotel. It is a Singapore-born brand rather than an import, built on a line of veteran Hong Kong-trained chefs and classics such as its crisp-skinned roast duck.
- 1992: Hua Ting opened as the signature Chinese restaurant of Orchard Hotel Singapore on Orchard Road.
- 2011: Masterchef Chan Kwok picked up both Chef of the Year and Asian Cuisine Chef of the Year at the Asian Gastronomic Awards of Excellence 2011.
- 2014: The restaurant was named Asian Restaurant of the Year at the World Gourmet Summit Awards of Excellence.
- 2017: After a multi-million-dollar makeover lasting close to four months, Hua Ting reopened in December 2017 with redesigned interiors, seven private dining spaces and refreshed menus including a tea-pairing degustation.
- 2018: The Peak's G Restaurant Awards 2018 gave Hua Ting its Best Dinner Experience (Asian) title.
- 2019: Hua Ting moved up from Silver the year before to take Gold at the Best Asian Restaurants Awards.
- 2026: The restaurant was still operating under the Orchard Hotel banner, running a Chef's Tasting Menu for May to June 2026 curated by Master Chef Lap Fai.
Did you know?
- Executive chef Chung Lap Fai started cooking in Hong Kong at age 17 and, by the 2017 reopening, had spent over 30 years in the trade and more than a decade leading Hua Ting's kitchen.
- Its roast duck with crackling skin is the dish the hotel itself singles out as the must-order signature, alongside dim sum such as the baked mango chicken tartlet and turnip cake wok-fried with house XO sauce in a hot stone bowl.
- Hua Ting belongs to Orchard Hotel Singapore, a Millennium Hotels and Resorts property within the Hong Leong group's hospitality arm (Millennium & Copthorne Hotels), so it is a hotel restaurant rather than a standalone chain.
- For many years the kitchen was run by two masterchefs together, Group Masterchef Chan Kwok and Masterchef Chung Lap Fai, both of whom won major Singapore culinary awards.
- The restaurant's Chinese name is 華廳, and the hotel describes it as one of the earliest Chinese fine-dining hotel restaurants in Singapore.
