The story of Hai Tien Lo

Hai Tien Lo is the long-running Cantonese restaurant of Pan Pacific Singapore at Marina Bay, born alongside the hotel in the mid-1980s and once perched near the top of the tower. It is a Singapore-only, hotel-owned restaurant rather than an imported chain, with dim sum and classic Cantonese cooking at its core.

  • 1980s: Pan Pacific Singapore opened at Marina Bay, and the hotel counts Hai Tien Lo as part of its story from the start; the hotel gives 1986, while a 2019 group press release says 1987.
  • 2019: New executive chef Ben Zeng, formerly of Hakkasan Miami and Cassia at Capella Singapore, rolled out refreshed a la carte and dim sum menus.
  • 2025: Malaysian-born chef Edden Yap, who grew up in Jinjang near Kuala Lumpur and cooked in Macau, Nanjing and Dubai, took over as executive Chinese chef.
  • 2026: Pan Pacific Singapore marked its 40th anniversary, with Hai Tien Lo joining the celebrations through an anniversary wine offer running to the end of the year.

Did you know?

  • Hai Tien Lo is the in-house Chinese restaurant of Pan Pacific Singapore at 7 Raffles Boulevard, owned and run by the hotel rather than an independent or franchised brand.
  • Before 2012 diners ate with sweeping views over the city skyline and Marina Bay; a 2009 review places the dining room on the 37th floor.
  • House-made dim sum prepared daily is a long-standing draw, and current signatures under chef Edden Yap include deep-fried Iberico pork spareribs in creamy sauce and steamed sea perch with aged Teochew preserved radish.
